Javier García
Javier García Ruiz was born in Guernica.
From 1969 to 1991 he worked at Restaurante
Faisán de Oro as first auxiliary
cook and, later, as Chef. In 1991 he joined
Hotel Boliña in Guernica, where he
worked as Chef until 1997. He then moved
onto Boroa Jatetxea, where he continues
to work as Chef.

with its identity with its elegant rustic
