| Sabin Arana

| Jolastoky
was born in 1921 under the tutelage of the
Olaizola sisters. Continuing the work of
his mother and aunts, Sabin Arana Olaizola,
along with his wife Begoña Beaskoetxea,
were able to elevate the name of Jolastoky.
It is currently owned by the Arana-Beaskoetxea
family, under the management of Begoña
Beaskoetxea along with her children Itxaso
Arana (Head of Hall and Sumiller), Sabin
Arana (Chef) and his wife Arantxa Bengoa
(maître). The latter three represent
the third Jolastoky generation, and continue
with the long tradition of doing things
well at the restaurant.
