Vizcaya is admired for the beauty of its coast, its valleys and its mountains. But it is also home to a gastronomic treasure which is as suggestive as it is singular.

Steep tradition and obliged culinary modernity come together in Geugaz Jan.

The Association of Basque Cooks, which was born with the fundamental goals of:

“Promoting, extending and defending the gastronomy
of Vizcaya as a differentiated cultural part of the
rich heritage of this Historic Territory.”


The study and divulgence of local produce and of traditional and modern recipes, real knowledge of the trade and the implementation of new frameworks of expression are the undertakings of the new founders of Geugaz Jan.

The most novel contribution of the Association is the study and implementation of a permanent school at each restaurant, with a view to providing students with real knowledge of the trade.

A trade, that of the cook, which today offers evermore quality flavours.
